How to make sweet tamales:
To start preparing the sweet tamales, whisk the vegetable shortening until creamy. This process will take you around 10 to 15 minutes.
Trick: You can substitute vegetable shortening for oil, the amount is proportional, or if you prefer to give it a more typical flavor you can use lard.
In another container, mix the dry ingredients: the tamale flour, the baking powder, the teaspoon of salt and the sugar. Mix well so that everything is incorporated.
On the other hand, it begins to hydrate the tamale leaves. To do this, put the leaves in a container with warm water and let them rest for 15 minutes.
When you have the butter whipped, add the dry ingredients little by little and mix to integrate everything.
Add the milliliters of milk and the can of condensed milk and mix again. At this point you can add the drops of red food coloring to give your dulce con lechera tamales a pinkish color.
Trick: you can not add the food coloring and leave them with their natural color. Also, if you want to give it another touch of flavor you can add a few drops of artificial flavoring of the flavor you want.
Once the dough and the hydrated leaves are ready, start assemble your sweet tamales. To do this, add a portion of dough on the sheet and distribute it from the center up, add some raisins and repeat the process until you finish with your dough.
Trick: You can fill the sweet tamales to your liking, if you leave them with their natural color you can add a piece of pineapple in syrup or fruit jam.
Transfer your tamales to a pot to cook them in a bain-marie. Arrange them vertically to prevent them from opening during cooking, cover with more tamale leaves and cover the pot to let them cook for an hour over low heat.
After cooking time, remove the tamales and serve immediately. We recommend accompanying them with a delicious coffee or milk. These are the traditional sweet tamales, but remember that you can make them in different flavors by adding pineapple or the fruit that you like the most.
