How to make Piccata Chicken:
Salt and pepper the chicken fillets to taste, place the flour on a plate and pass the meat through it to coat it a little. Thus, the piccata chicken will be juicier.
Put a pan or casserole on the fire, add a splash of oil and 2 tablespoons of butter. When it’s hot brown the chicken fillets on both sides, take them out and set them aside.
In the same pan, and taking advantage of what has been stuck to the chicken, add one more tablespoon of oil. Chop a couple of garlic, add them to the pan and cook over low heat until they start to take color.
When the garlic begins to take color, pour the white wine and let it cook for 3-4 minutes or until the alcohol evaporates. Squeeze the lemons, add a part of the juice and a glass of broth. You can use homemade chicken broth or dissolve a bouillon or bouillon cube in a glass of hot water. Let the sauce cook for 10 minutes over medium-low heat. Salt test, add a little more pepper if you like and decide if you want to add more lemon juice, since the final amount will depend on your taste.
When the sauce has simmered for a few minutes, add the beef fillets and let the chicken piccata cook for 3-4 more minutes. Then add a handful of capers and 1-2 tablespoons of butter. Taste the sauce to see if it is to your liking, especially lemon, since if it is strong you can lighten it with a little water.
Move the casserole for 5 minutes so that the sauce thickens with the flour that the chicken has and that’s it. If the sauce is too light, put a little water in a glass, break up a spoon of flour and add it. Serve this amazing chicken piccata recipe in a bowl with the sauce and add a handful more of capers.
