How to make Stuffed Turkey Breast for Christmas:
Prepare the filling turkey breasts for Christmas. To do this, peel the onions and cut them into julienne strips. With a vegetable peeler, peel the carrots, cut them in half and, in turn, cut them in two to make small, thin sticks.
Heat three tablespoons of olive oil in a pot or pan and add the onions in julienne. Cook over low heat for 15 minutes, stirring occasionally.
Add the carrots, continue cooking over low heat for another 15 minutes and stirring from time to time. At the end of cooking add a little salt and pepper. Remove from heat. If you prefer, you can add apples, mushrooms, bacon, raisins …
While the onion and carrots are poached, cut the dried apricots into small pieces and fillet the peeled pistachios. These ingredients are widely used when making stuffed turkey, so they fit perfectly in this stuffed turkey breast recipe. However, if you don’t like them, you can skip them.
Add the raisins, dried apricots and pistachios chopped with onion and poached carrots. Mix well and reserve the filling.
Now, prepare the turkey breasts to proceed to fill them. So, cut them out and open them in book form. To do this, cut the breast from the bottom with a sharp knife and without going all the way. You have to leave a fatter part on top uncut.
Open with your hand that thickest part and put the knife back where you had left the cut, but pull towards the thickest part so that it is also split in half without reaching the end.

Do the same with all the breasts. Spread them well and flatten them with a wooden kitchen mallet tapping gently. Salt and pepper to taste
Layer the turkey breasts a little on top of each other so that you can form a larger meat sheet. Later, place the stuffing on the turkey breast, as shown in the picture.
Roll the breasts lengthwise to make one large roll. Once the stuffed turkey roll is ready, secure it with kitchen string to prevent the stuffing from coming out.
Preheat the oven to 200ºC. While, brown the roller a little so that it is crispy on the outside and juicy on the inside. Thus, put three tablespoons of olive oil in a pan over high heat. When hot, put the stuffed turkey breasts in the oil and brown on all sides.
Place the stuffed turkey breast in a dish suitable for the oven, water it with the chicken broth and sweet wine. Bake with heat up and down at 200 ºC for 50 minutes, opening the oven every 10 minutes, watering the breasts with the cooking broth itself and turning them so that they are not dry.
You can use homemade chicken broth to make the meat more flavorful.
Peel the oranges and cut them thinly sliced. Put them around an elongated dish and place a few grains of pomegranate on top. Take the meat out of the oven and cut the kitchen string with scissors. Put the breast on top and serve immediately. You can also serve the stuffed turkey breast for Christmas with another salad, like the Waldorf salad.
Collect the leftover broth of the cooking of the breasts and put in a small frying pan over the fire. Dilute the cornstarch in a little water, add to the broth and stir until it thickens. You will have a delicious and ideal sauce to accompany the meat.
