Beat the egg in a bowl and add the pumpkin puree along with the milk. Mix until blended everything’s fine.
Trick: If you don’t have pumpkin puree ready, wash and peel a pumpkin, chop it up, and boil it in water until tender. Strain it and make a puree with it. You can also roast it, it will be very rich and with less water.
Mix the yeast with the flour and gradually add the previous mixture. You may not need all of it, it will depend on the amount of water in your puree, especially if the pumpkin has been boiled and is not well drained. There must be a kind of dense mush.
Heat the oil in a large skillet. Add a tablespoon of dough in the pan and then put another on top to give the pumpkin toasts their characteristic shape. Then, give it an elongated shape with the help of a wooden spoon so that it looks like a French toast. Let them fry for a few minutes on each side until the torrijas are golden brown.

Baked pumpkin torrijas
Canarian pumpkin torrijas can also be baked instead of fried if you want to reduce the number of calories. For this, the most recommended is use cupcake liners, since the dough is not very compact. So, preheat the oven to 180 ºC with heat up and down and follow these steps:
