To start making your stuffed buns, mix both flours with the salt and create a crown as you see in the image. In the middle, add the water and yeast.

Incorporate the ingredients from the center out to form a dough. Mix it for about 5 minutes and cover to rest 30 minutes.
While the dough of your loaves rests, proceed with the filling. To do this, peel and chop the onion. Then caramelize it with its own sugar. To do this, brown it over medium heat in a nonstick skillet with cooking spray or a very small splash. Add 1 tablespoon of water and stir sporadically until evaporated. Repeat this procedure as many times as you want until you get some tender and very sweet onions to fill your buns.
To complete the filling, chop the spinach leaves as finely as you can, previously washed, and mix them with the onion that you have caramelised. Season this preparation with nutmeg.
To wash and disinfect vegetable leaves, soak them for 15 minutes in 1 liter of water with a quarter cup of white vinegar. Then, rinse them and soak them in 1 liter of water with 1 drop of bleach suitable for cleaning food. You can dry the leaves of the vegetables and store them in the refrigerator in a container by alternating layers of the leaves of the vegetable with kitchen paper. This procedure will not only make them safe to eat, but it will also make the leaves of vegetables last longer in the refrigerator, making them ready available to cook a wide variety of recipes. Divide the dough of your buns into 6 buns and roll them out to a thickness of approximately 0.5 mm high.
In the middle, arrange the filling that you have previously prepared along with a cube of fresh cheese.
In order to close the stuffed buns, wet the edges with a little water and overlap them in the center, exerting some force with your fingers to seal them, as you can see in the image. Try not to leave too much dough in the center, as it will not cook properly on the griddle.
Once you’ve closed all of your stuffed buns, spray a griddle with cooking spray. If you don’t have a spray bottle, you can pour in 1 teaspoon of oil and spread it out with a napkin or your fingers. Heat the iron over medium heat and, when the oil has heated up, add the breads.
Trick: you can cook the cheese buns in the oven at 180 ºC for 10-15 minutes or until done.
After about 5 minutes, turn them around so they cook on the other side. You can cover the iron so the steam helps cook them.
Cook 5 more minutes and serve. You can accompany them with a fresh salad or take them to work or school as a healthy lunch option.
