In addition, in the same portion it provides less fat and offers a better quality of carbohydrates thanks to the fiber in whole wheat flour and the reduction in the amount of sugar used. You can even not paint them with syrup to make them 100% sugar free.

How to make whole croissants:
Warms the milk and dissolves the yeast in it. Integrate it with the water, the egg yolk, the vanilla essence and 50 grams of soft butter.
Mix the flours with the saltMake a crown like the one you can see in the photo and pour the preparation from the previous step in the center.
Add the ingredients little by little kneading vigorously for 5 minutes. It will be a moist dough, but try not to add more flour.
Trick: you can make your whole grain croissants with seeds by now adding them to the dough.
Place the dough in a floured bowl and cover. Let it rise for 2 hours at room temperature or 12 hours in a refrigerator (refrigerator). This step is important to get whole croissants with the correct texture, so it is important to respect the rest times.
Sprinkle flour on the table and roll out the dough to 1-2 cm thick. Preheat the oven to 180ºC.
Cut it into triangles and spread with the remaining 5 grams of melted butter.
Roll up the triangles starting at the widest part and shape them into a crescent. In the image you can see the progression.
Place the whole croissants on a plate greased with butter and floured, but making sure they touch the tips of the previous one. Let them lift covered for 15-20 minutes.
Paint them with the egg white mixed with a pinch of salt. Later, bake wholemeal croissants for 15 minutes.
While your whole croissants are baking, prepare the syrup heating the ingredients in a saucepan. Turn off the heat 2 minutes after it boils and let it cool. Remember that you can also make your croissants healthy by eliminating the syrup from the recipe.
Remove the croissants from the heat and paint them with the syrup while they’re still hot.
You can now enjoy your whole croissants with a coffee with milk or a mate. Likewise, you can fill them with ham and cheese, dulce de leche or pastry cream. They are exquisite!
