Put a saucepan to heat with water and, when it starts to boil, add the peas. Leave them until they are tender. Peas can be canned, fresh, or frozen.
Cut the chorizo and ham into small cubes. Put a pan with very little oil, add the chorizo and ham and sauté over medium heat.
When the peas are cooked, drain them well. Once you have sautéed the chorizo and ham, add the peas, let them cook for a few minutes so that they take on the flavors. Add the fried tomato and leave again for a few minutes. When all the flavors have been mixed, turn off.
Take the clay pots and distribute the sauce among them.
Put the casseroles on the baking tray. Add a tablespoon of tomato sauce in the middle of each casserole. It is optional, but when you put it in the oven it will dry out more, so with a little more tomato it will be juicier.
Add an egg to each casserole. Break them into a separate bowl to make sure they are good and add them to the casseroles later. Put the plate in the oven at 180 ºC and leave it until the eggs are cooked. The doneness of the eggs will be as you like best, well done or little.
