At least three days before preparing the truffle eggs recipe, you must put the eggs with the truffle in a container with cap. As the eggshell is so porous, it absorbs the aroma of the truffle and therefore the eggs will have a slight taste of this fungus when you cook them. In addition, this way the truffle is better preserved. Of course, you should dry the mushrooms every day or every two days with kitchen paper to prevent them from getting too wet.
Trick: if you leave the eggs with the truffle for four or five days, the better. Think that the truffle can be kept like this for about 15 days perfectly.
As we propose to make truffled eggs with potatoes, when cooking the recipe, start with Peel the potatoes and cut into slices rather thin. We have decided to cook them in the oven, but you can make straw potatoes, common fries or baked potatoes in the microwave, you choose!
Grease the baking tray with a little oil, place the potato slices on it, add a little more oil and a splash of water (you could use white wine, but we want the main flavor of the dish to be truffle) . Bake the potatoes at 180 ºC, with heat up and down, for 15-20 minutes or until done.
