Prepare the dough putting the egg, flour, milk, salt and pepper to taste in a bowl. Beat and mix well. There should be a soft dough not too thick. You can add a little coloring to the dough to give the batter color.
Prepare the fish cleaning it and removing the thorns, preferably. If you use cod, choose to buy it already desalted. If you buy it dry, you will have to soak it for 48 hours, changing the water every 8 hours. Before using it, we recommend you try cooking a small piece to see how salty it is. If necessary, leave it in a little more water. Dry the fish with a little kitchen paper, season with salt, pepper and cumin.
Put a pan with plenty of sunflower oil to heat. Do not put the fire very strong because sunflower oil burns at high temperatures and would spoil the fish bristle. Put the pieces of fish in the dough, bathe them well in it and drain the excess.
When the oil is hot, but without smoking, fry the bored fish in batches of two so as not to cool the oil. You should cook them for about 5-7 minutes, making sure they do not burn.
Brown them on both sides so that they are crispy on the outside and juicy on the inside. Once they are done, remove them and leave them on a plate with kitchen paper to absorb the excess oil.
