In this opportunity, we are going to do baked falafel with cooked chickpeas, but if you don’t have them, you can put a glass of chickpeas to soak the day before and cook them later. They will need an hour and a half over low heat in a conventional pot, but if you prepare them in a speed cooker or express they will be ready in about 45 minutes.
When you have them ready, finely chop the onion, garlic and coriander, and add them to the drained chickpeas.

Take the falafel tray to the oven and place it at medium height. Cook at 200 ºC for 10 minutes for each side. If you see that it needs more time, add 5 more minutes of cooking for each side of the falafel. Once ready, serve them with salads and yogurt sauce, you can also enjoy it with tahini sauce and whole wheat pita bread.
