Empanadas are one of the most universal recipes, as they have many versions in countries on all continents. They can be square, round, rectangular, semi-circular; as well as they can be filled with a wide variety of traditional ingredients where they come from.

How to make Espinagada:
First, cut the loin fillets into very thin strips and leave them in a large bowl adding pepper and salt. Mix and reserve, since in this recipe we are going to prepare two separate parts of the spinagada or empanada filling.
Then, chop the vegetables finely (parsley, garlic, chives, and cabbage). Mix them all together in a bowl. On the other hand, prepare a sheet of dough for empanadas, you can buy it fresh from the supermarket or make it yourself by clicking on the link, it will not be difficult at all!
In this bowl of chopped vegetables, add oil salt and paprika, mix everything again until they are fully integrated. Let this mixture rest for 15 minutes. Meanwhile, preheat the oven to 200 ºC with heat up and down.
On a baking tray spread a parchment paper, that is, special for the oven. We take advantage of the special paper that comes with the fresh dough sheet.
Spread a layer of marinated vegetables, then a layer of meat to strips of loin. Spread throughout the dough, add the raisins and finish with the rest of the vegetables. Leave at each end three fingers without any filling to be able to seal the loin and cabbage spinach easily.
Once you have prepared the base of the filling, fold each end being careful not to deform the dough. You have to close the sides and bring them to the center both, make a kind of seal by twisting subtly and, if you think it is necessary, make grooves with a fork.
Form a triangle like an envelope with the ends and close at both ends of the spine, as you can see in the photo. Use the fork to form small holes in the dough that will facilitate the cooking of the empanada.
Take to the preheated oven and cook this espinagada de llom amb col 35 minutes at 180 ºC. Place it on medium height and check the preparation every so often to make sure you don’t overdo it, as each oven is different.
