To start the recipe for poblano pambazos, in a pot boil 3 cups of water and place the guajillo chili and the ancho chili already clean, that is, without seeds or veins. Let them soften for 5 minutes and reserve.
In a frying pan or pot, pour a little oil and fry half an onion and a clove of garlic finely chopped. Cook both ingredients until the onion begins to crystallize and the garlic is lightly browned.
Add the sausage chopped up, after ground beef and a pinch of salt and stir constantly so that the sausage does not burn. Let the filling of the poblano pambazos cook until the meat and the golden sausage are well cooked.
While the meat is being cooked, blend the chili peppers, Add the cumin, cinnamon, oregano, cloves, fat peppers, bay leaf, a piece of onion and a clove of garlic. Pour in some of the water that was left from cooking the chiles and blend for 3 minutes.
