Place the flour in a bowl and the yeast dissolved in the warm water in the center. Add 2 tablespoons of olive oil and the salt.
Knead with your hands about 5 minutes until you get the dough for the focaccia. Let it rest covered and in a warm environment for 30 minutes.
When the dough has risen, separate it into two halves. Oil a mold measuring approximately 30 by 30 cm and place one of the dough halves in it. Spread it with your fingers until it covers the entire base.
Place the cubed cheeses, sliced tomatoes, pitted black olives and basil in the focaccia dough. Salt and drizzle with a little olive oil.
To seal the focaccia, place the other half of the dough previously stretched. Once the lid is on, press with your fingertips so that the dough sinks slightly (without making holes). Drizzle some more olive oil on top. Put a handful of semi-coarse salt and a little thyme.
It leads to a strong oven at 180 ºC for 30 minutess. When it’s golden brown, scoop out your stuffed focaccia, slice it up, serve, and enjoy.
