How to make Chicken Quinoa Salad:
Put the chicken breasts in a pot and cover them with water, add a little salt and two bay leaves. Cook the chicken for 30 minutes. over medium-low heat or until breasts are cooked and tender.
In another pot, cook the quinoa. To do this, look at the package to see the water cooking ratio. In ours it is a part of quinoa for three of water. Put the water to cook with a little salt and a bay leaf. When it starts to boil, add the quinoa. Look on the package, too, for the cooking time of the quinoa. In ours, 10 minutes of cooking and 5 of rest are indicated. The quinoa will have puffed up and absorbed all the water. Reservation.
Once the breasts are cooked, drain and cut with the help of a knife. You can fillet it finely or cut it into thicker but not very large pieces to make the quinoa and chicken salad to your liking.
