Put a good jet of olive oil in a pan or wok and, when the oil is hot, sauté the leek for two minutes, stirring constantly because it burns very quickly. Then add the peeled prawns and sauté for 2 more minutes.
Add a little freshly ground pepper, stir a little and remove from the heat, although you can also remove the pepper or add any spice that you like.
In a recipient beat three eggs until very foamy and clarify, this will help the leek and prawn quiche to be fluffier.
Once you have them well foamed, add the coconut cream or cream, either one will add creaminess to the cake. Add a pinch of dried dill, it will give it a very special touch.
