First chop the vegetables, onion, garlic and part of the chunk of the pepper; reserve some of the remaining pepper for later. Pour in a splash of olive oil and sauté. Stir over a very low heat so it doesn’t burn. Meanwhile, clean the interior of the squid very thoroughly and discard the feathers that are inside.
On the other hand, chop its tentacles and add them to the pan with the sauce, mix and sauté 3 minutes, then reserve.
Sauté the grated natural tomato in a pan with olive oil and, when it has been sautéing for 5 minutes, add the remaining pepper, add a point of salt and add the dill and pepper. Let it sauté for 5 more minutes over low heat.
Now is the time to stuff the squidWe advise you to use a small fork to make it easier for you to insert small amounts inside each piece. Once you have filled in half, you can close it by crossing it with a toothpick to prevent the filling from coming out.
Trick: Do not overfill the squid pieces or when frying they will burst and spoil.
Prepare a pan with plenty of olive oil for later fry the squid. Fry each piece four by four so that they do not lose their shape and stick together, leave each batch for 3 minutes.

Prepare the sauce for the stuffed squid in a pot. Pour in the white wine and let the alcohol evaporate, the wine will be reduced and a minimum amount will remain, add the fried tomato at this time and stir.
Then, pour in the fish broth and let it boil for 5 minutes over high heat, without covering the pot. If you don’t have fish stock or stock, you can use a stock cube, it will also be effective.
Now, add the ink and stir so that it dissolves well and dyes the broth its characteristic black color. You must let it reduce the sauce by half so that it thickens and you do not have to add thickeners, it is also important that the ink has at least a 15 minute cooking time so that it can be digested properly.
It’s time to add the squid, once the sauce is in perfect harmony, its texture slightly thick and tinged. Add them, cover the pot and simmer for 12 minutes.
They will be ready to taste immediately after this time has passed. Serve the squid stuffed in their ink with some slices of bread and you can enjoy a wonderful gourmet sauce. This same sauce can be used to prepare multiple dishes, such as the well-known black rice.
