To make this recipe for potatoes with artichokes, start by cleaning the artichokes. Cut the front part, about 2 fingers, and remove the leaves until you reach the center, where they are whitest and most tender.
Prepare a bowl with water, some parsley leaves and a splash of lemon. Put the squeezed lemon wedge into the water. Cut the artichokes in half, remove the hairs from the center and cut into quarters. Put the artichoke pieces in the bowl in the water so they don’t turn dark.
Prepare the stew, peel and chop an onion and a couple of garlic cloves. Put a saucepan with a splash of oil, add the chopped onion and let it fry for a few minutes. When it starts to take color, add the minced garlic.
Peel and cut the potatoes Without reaching the end, crush them to release the starch that will give the sauce more body. Add them to the casserole, stir for a minute and add the sweet paprika; stir everything together.
