Cut off both ends of the artichoke and remove the toughest layers until you see that the leaves are becoming more yellowish. Rub with the lemon juice to prevent blackening. On the other hand, put a saucepan to heat with 1 or 2 liters of water, enough to cover the artichokes.
Trick: if the artichokes are very large, cut them in two halves.
When the water in the pot is boiling, add two large pinches of salt, then put the artichokes in the casserole and boil for 10 minutes putting the lid on the casserole. Once cooked, let the artichokes drain to cut the cooking, do not worry if they are very whole, then you have to cook them a little more.
Trick: the cooking of the artichokes should be minimal and try not to be too soft.
Chop onion and slice the garlic cloves. Meanwhile, put a frying pan to heat with a good jet of oil.
Once the oil is hot, Sauté the onion and garlic slices until golden brown and add the flour, stir until mixed and do not let it burn, have a minute on low heat.
After this minute, pour the white wine Montilla-Moriles, stir and you will see that a thick mass is forming, keep stirring and add a glass of water. Dilute until the dough becomes a sauce, if it is too thick add more water.
Boil for 3 minutes and add a pinch of turmeric and minced mint. Let it continue to boil for 3 more minutes, then reintroduce the artichokes that you left dripping.
Add the serrano ham in shavings and let it boil over medium heat for 7 minutes without covering the casserole, taste and give them a point of salt, taking into account that the ham already has a salty point.
