To make these artichokes with foie and pine nuts, peel the artichokes by cutting both ends, just leave the heart of the artichoke. Afterwards, defoliate a little until the leaves are lighter and look more tender. Heat a casserole with a liter of salted water and a dash of lemon.
Rub the artichokes with half a lemon so that they do not darken and, when the water in the casserole begins to boil, add the artichokes. Cover and simmer for 15 minutes. If it is necessary to cook longer depending on the quantity, add 4 more minutes, but the artichokes do not need to cook too much or they will soften and lose their flavorful texture.
Trick: when they are cooked, remove and let them drain upside down to remove the cooking water.
Heat a casserole and a few drops of oil to toast the pine nuts lightlyIf you stir the casserole to brown, the pine nuts will be golden at the same time. Do not have them too long, just a few seconds and take out and reserve.
Peel an apple, remove the skin and core, and cut into small cubes. Chop the white part of a chive. Pour a splash of olive oil into a frying pan, heat it up, and add the apple and chives. Sauté for approximately 3 minutes.
Add the wine, stir for a few seconds and pour the glass of water. It gives a point of salt and ground white pepper. Let it cook slowly for 4 more minutes. Go on to crush the apple and the rest of the ingredients until they become a thick cream.

Choose an oven-safe dish and pour the applesauce into it. Spread the artichoke hearts on top and add a piece of foie. Bake at 200 ° C with heat up and down for 5 minutes.
